Is there a child who does not like pancakes? I didn't meet him. Small / American pancakes, I made them for the first time when I was introducing finger food to the children. They are very convenient for their handle and they are adorable while eating them.

My children are older now, but some of our habits are left over from the era of complementary feeding, including these oat pancakes. This is a much healthier version than classic pancakes because oatmeal replaces flour and coconut oil replaces sunflower oil.


Pancake recipe:

  • 250 g of oatmeal
  • 2 eggs
  • 250 ml of milk
  • 250 ml of water
  • 1 tablespoon of sugar or honey
  • 2 teaspoons of baking powder
  • 1 teaspoon of cinnamon
  • A pinch of salt
  • Coconut oil
  • Fruit spread

Preparation:

Grind the oatmeal in a blender to get flour. Beat the eggs and sugar/honey in a bowl with a whisk. Add ground oatmeal, baking powder, milk and water to the eggs little by little. Add salt and cinnamon to the mixture and mix everything nicely with a whisk. Let the mixture stand for about 15 minutes because the oatmeal will swell.

Heat the coconut oil in a pan and spoon the pancake mixture. Fry the pancakes for 1-2 minutes on each side.

Spread the baked pancakes with fruit spread as desired and enjoy.
